"Perla and Ocean Terrace each bring a distinct identity to our culinary program while reflecting our commitment to exceptional quality, genuine hospitality, and creating experiences that resonate with both guests and residents." General Manager Pablo Molinari said that in the resort's September 30, 2026 announcement. The word "residents" matters there. For anyone who lives inside the Bahía Beach gate, the resort's restaurants work as the neighborhood's dinner options, and over the next few weeks those options take a new shape.
The shape is the story. Less than a year after Four Seasons opened here, the resort has fewer venues and a clearer split between kinds of dinner. Perla handles the planned evening. Ocean Terrace takes the all-day oceanfront table. Palm Court, the renamed lobby bar, covers most other meals. Knowing which room covers which night, and on which days, now matters more than any single menu.
The List, Then and Now
When Four Seasons Resort and Residences Puerto Rico opened on November 20, 2025, its announcement counted "ten dining and bar concepts." It named El Bembé, the lobby lounge known for rums and live music. It also named Paros, a Mediterranean restaurant that used produce from the on-site organic garden, and Seagrapes, an open-air restaurant serving the day's catch. A pop-up sushi bar, Turtle's Nest and private beachfront dining at Sand Dollar rounded out the highlights.
The resort's dining page now lists eight entries, with in-room dining among them.
| Named at the November 2025 opening | Where it stands as of October 5, 2026 |
|---|---|
| El Bembé, lobby lounge | Renamed Palm Court, with the Puerto Rican and Latin-inspired menu kept |
| Paros, Mediterranean | No longer on the dining page |
| Seagrapes, open-air seafood | No longer on the dining page |
| Pop-up sushi bar | Sushi on Palm Court's schedule, Thursday through Tuesday, 5:00 to 10:00 p.m. |
| Turtle's Nest | Listed |
| Sand Dollar | Listed |
| Not yet announced | Perla, opening October 19, 2026 |
| Not yet announced | Ocean Terrace, opening early November 2026 |
The resort has not published a closure notice for Paros or Seagrapes. Its announcement also does not say which former spaces Perla and Ocean Terrace will use. The fair summary is that both venues have dropped off the current list. Turtle's Nest's description still places it "steps from Seagrapes and the Seabreeze Lawn." That is older site copy, not a sign that Seagrapes is still open.
A Plan Announced in February
The reset was flagged months ahead. In a February 5, 2026 release introducing Executive Chef Victor Rosado, the resort said it would "unveil food and beverage renovations, setting the foundation for new dining concepts and refreshed spaces." The same release described a culinary calendar meant "to bring guests, residents and the local community together." That calendar started with a Big Game event on February 8 and continued with Easter and Mother's Day brunches.
Rosado oversees all culinary operations at the resort. He was born in San Juan and earned a bachelor's degree in culinary arts from Universidad del Este, now Sistema Ana G. Méndez. His listed experience includes Fern by Jean-Georges, Mi Casa by José Andrés, El Yunque Treehouse Restaurant, Bazaar Mar by José Andrés in Miami, and The Breakers in Palm Beach. The resort credits him with helping lead a restaurant nominated by the James Beard Foundation for Best New Restaurant. It also notes his feature in StarChefs' Rising Stars program.
His stated approach centers on local seafood, seasonal produce and techniques such as wood-fired cooking, shaped by his grandparents' kitchen. In his words: "Coming back to Puerto Rico, and specifically to Bahía Beach, means everything to me." The two new restaurants are the first full concepts opened under his direction since that February announcement.
Perla Is Built for the Planned Evening
Perla opens October 19, 2026, two weeks from today. The resort describes it as a supper club with premium seafood and cuts, world-class wines and spirits, and "thoughtfully choreographed tableside moments." The tableside service includes a Champagne, Martini and Caviar Cart and a chef-led caviar service. Signature dishes include dressed oysters, Hamachi with guanábana ponzu, Chilean sea bass and a Prime New York strip. Large-format dishes include a Tomahawk steak and a whole Dover sole.
Two details from the restaurant's page matter for planning. Dinner runs from 6:00 to 10:00 p.m., and seating is listed as outdoor terrace only. Reservations go through (787) 809-8110. Since every table is outdoors, the weather matters when you book. Large-format plates and a caviar cart also mean Perla is set up for a booked occasion more than a quick weeknight dinner.
The menu also fills the gap Seagrapes left. Seafood, which was Seagrapes' whole identity, now shows up at Perla as dressed oysters, sea bass and a whole sole served as part of an evening.
Ocean Terrace Keeps Mediterranean on the Menu, From Breakfast On
Paros was the resort's Mediterranean restaurant at opening. Ocean Terrace keeps that cuisine but serves it all day. The resort places it alongside the pool and shoreline, serving breakfast, lunch and dinner "from sunrise to sunset." The menu includes handcrafted pizzas, housemade pastas, fresh seafood, salads and shareable starters. Signature dishes include charred octopus, shrimp insalata, Margherita pizza, mussels al limone and an Italian adobo half chicken. The resort also plans recurring brunches and seasonal programming there.
The opening date is given only as "early November," and the restaurant's page has no operating hours yet. Until those hours appear, any plan that depends on Ocean Terrace for a specific meal is tentative.
Taken together, the two openings cover different parts of the day. Perla is a single seating window built around ceremony. Ocean Terrace runs from morning onward and offers pizza and pasta. Palm Court sits between them.
Palm Court Carries the Daily Load
The renamed lobby bar now has the longest posted hours of any resort venue. Breakfast runs from 7:00 to 11:00 a.m., lunch from 11:00 a.m. to 4:00 p.m., and dinner from 4:00 to 10:00 p.m. Sushi is served Thursday through Tuesday from 5:00 to 10:00 p.m. The resort describes the lounge and terrace as having live music, world-class rums and ocean views. Reservations go through +1 (787) 809-8024.
The new name keeps the old character. The resort says Palm Court continues the Puerto Rican and Latin-inspired flavors that defined El Bembé, under what it calls "a refreshed identity." Sushi, a pop-up at opening, now has a fixed schedule. Wednesday is its one night off.
How the Evening Week Lays Out
The days that matter come from the published schedules. The Beach Club Restaurant, which serves local Puerto Rican specialties and American clubhouse classics with beach views, is closed Monday and Tuesday. It opens at 11:00 a.m. on its other days and closes at 9:00 p.m. on Wednesday, Thursday and Sunday and at 9:30 p.m. on Friday and Saturday. Perla's page lists dinner hours without naming days, so the table below shows only what has been posted.
| Evening | Palm Court dinner, 4 to 10 p.m. | Palm Court sushi, 5 to 10 p.m. | Beach Club Restaurant | Perla, from October 19 |
|---|---|---|---|---|
| Monday | Open | Served | Closed | 6 to 10 p.m., days not specified |
| Tuesday | Open | Served | Closed | 6 to 10 p.m., days not specified |
| Wednesday | Open | Not served | Until 9 p.m. | 6 to 10 p.m., days not specified |
| Thursday | Open | Served | Until 9 p.m. | 6 to 10 p.m., days not specified |
| Friday | Open | Served | Until 9:30 p.m. | 6 to 10 p.m., days not specified |
| Saturday | Open | Served | Until 9:30 p.m. | 6 to 10 p.m., days not specified |
| Sunday | Open | Served | Until 9 p.m. | 6 to 10 p.m., days not specified |
Through October 18, Monday and Tuesday evenings come down to Palm Court alone. On Wednesday, the Beach Club Restaurant is open and Palm Court has no sushi. Once Perla opens on October 19, the early-week evenings gain a second option for anyone willing to book a terrace table.
Daytime on the Community Side
Daytime has more coverage, much of it run within the Bahía Beach community. El Cocoteros Grill, next to the driving range, serves breakfast and light lunches daily from 7:00 a.m. to 6:00 p.m. and will deliver to a golf cart. Sand Dollar, near the 18th hole, serves grilled seafood and cocktails on Saturday and Sunday from noon to 5:00 p.m. Turtle's Nest, near the bocce courts, serves bento-box food from 11:00 a.m. to 5:00 p.m. The community's own dining page adds Sugar Beach Bar, open daily from 11:00 a.m. to 5:30 p.m., and Blends Juice Bar, open from 7:00 a.m. to 4:30 p.m.
Every one of those daytime spots closes by 6:00 p.m. That is why the evening rooms, Palm Court, the Beach Club Restaurant and soon Perla and Ocean Terrace, carry so much of the neighborhood's dinner.
The resort has not published a policy on dining access for residents versus non-guests. The September release says only that the new concepts are meant to resonate with "both guests and residents." For a firm answer before booking, call the reservation lines listed above. The resort's 2026 New Year's program is still marked "to be confirmed." Ocean Terrace's posted hours, expected around its early-November opening, are the next schedule detail to watch.
At The RODE Collection, we track how changes like Perla and Ocean Terrace affect daily life inside the Bahía Beach gate, because those details shape how a home there is lived in and presented. If you are thinking about your own place in the community, or how it compares with the rest of the corridor, schedule a private consultation.
